Japanese Curry: https://www.justonecookbook.com/simple-chicken-curry/ (instead of chicken we swapped it for vegan chicken tenders and put them on top of the curry) 2. Tomato Basil Spaghetti ?? (Estimated quantities, we mostly cooked by feel ?) Ingredients: * 3–4 garlic cloves, minced * 2–3 tbsp olive oil * 2 punnets cherry tomatoes, halved * Salt, to taste * 1 bottle (around 700g) passata(we love the passata with Parmigiano Reggiano in it) * A big handful of fresh basil * 1–2 tsp maple syrup or brown sugar (start small and taste as you go) * Freshly grated Parmigiano Reggiano * Splash of pasta water * Spaghetti of choice * Garlic bread, to serve ? Method: 1. Heat olive oil in a large pan over medium heat and gently fry the garlic until fragrant. 2. Add the cherry tomatoes with a good pinch of salt. Cook until soft and blistered, you should be able to gently pop them with a spoon. 3. Pour in the passata and stir through most of the fresh basil. 4. Add a small amount of maple syrup or brown sugar to balance the acidity of the tomatoes. Taste as you go so it doesn’t get too sweet. 5. Let the sauce simmer for 20–30 minutes to deepen the flavour and naturally sweeten. 6. Turn off the heat and stir through extra fresh basil, grated Parmigiano Reggiano, and a splash of pasta water to make the sauce silky. 7. Toss through your cooked spaghetti and serve with extra cheese and garlic bread. SO YUM ? 3.
