She’s sent me dozens of posts that have come across her feed and imagined all of the dinner possibilities we could make with this. So we got one ? (thanks to Rockpot for gifting it to us!!) I’ve gotta admit, it’s totally worth all of Meg’s hype ? I haven’t cooked with a crockpot in yearssss because I pride myself on putting in lots of effort to prep and cook every step of a meal, but this new lifestyle we have can be quite exhausting, and I don’t always want to be cooking dinner every single night… especially after a long day of driving. We used up the last of our firewood the morning we were packing up to leave Pinnacles National Park. We heated up the rock that sits in the bottom of the Rockpot directly in the fire and used the temperature gauge to read how hot it was. After about 30 minutes, we placed the rock in the bottom of the Rockpot, put all of our food in the pot (in this case - ingredients for chicken tinga - recipe for my chicken tinga burrito bowls is on my blog), and drove to our next campsite near Santa Cruz. Once we settled into camp, it was time for dinner and all I needed to do was heat up some prepped rice and fix our bowls! The chicken was still perfectly warm, so easy to shred, and it was delicious.
