It's very simple and quick to make, and it turns out like the best homemade comfort food. Tender leeks, ginger, zucchini, and herbs create an amazing flavor that warms and energizes. I make it every weekend — and it turns out perfect every time!
Vegetable soup with leeks:
1 onion.
Olive oil.
Fry over medium heat.
2 leeks.
They're low in calories, help curb appetite, and stimulate metabolism.
Leeks are also great for the immune system and can be used as a preventative measure against colds.

2 carrots.

Cover and simmer for 15 minutes.
