Resep Gulai Kambing (untuk 15 porsi)
Bahan:
2 kg iga kambing muda, potong
5 lembar daun salam
6 cm jahe
2 sdm garam
air
Bahan bumbu halus:
8 siung bawang putih
12 siung bawang merah
5 cm lengkuas, potong
5 cm jahe, potong
8 cm kunyit, potong
125 gr cabai merah tanjung
130 ml minyak
100 ml air
5 butir kemiri, geprek
2 sdt lada putih butir
1 sdm ketumbar
2 sdt jintan
½ butir pala
Bahan rempah kering:
3 butir cengkih
6 butir kapulaga
2 buah bunga lawang
5 cm kayu manis
Bahan lainnya:
2 batang serai
3 lembar daun salam
5 lembar daun jeruk
½ lembar daun kunyit
2 buah asam kandis
3 liter air
3 sdm garam
1 sdm kaldu ayam bubuk
½ sdm penyedap
1-2 sdm gula pasir (opsional)
130 ml Sasa Santan Kelapa
Pelengkap:
sambal rawit hijau
acar bawang merah
bawang merah goreng
jeruk nipis
nasi putih
Cara membuat:
1. Didihkan air, masukkan iga kambing, daun salam, jahe geprek dan garam. Presto selama 15 menit
2. Panaskan wajan, masukkan lada putih, ketumbar, jintan, pala dan kemiri yang sudah digeprek, sangrai hingga wangi
3. Di dalam blender, masukkan bawang merah, bawang putih, cabai merah tanjung, kunyit, jahe, lengkuas, aromatik yang sudah disangrai, minyak dan air, haluskan
4. Tumis bumbu halus lalu masukkan daun salam, daun jeruk, serai geprek, daun kunyit, kayu manis, kapulaga, cengkih, bunga lawang dan asam kandis, tumis hingga wangi dan mengeluarkan minyak, sisihkan
5. Tiriskan daging iga kemudian masukkan ke dalam panci. Masukkan bumbu halus, air, garam, kaldu ayam bubuk, penyedap, gula pasir dan Sasa Santan Kelapa, masak di api sedang kecil selama 15 menit
6. Gulai iga kambing siap disajikan

Gulai Kambing Recipe (yield 15 servings)
Ingredients:
2 kg young goat ribs, sliced
5 pc bay leaf
6 cm ginger
2 tbsp salt
Water
Spice Paste ingredients:
8 clove garlic
12 pc shallot
5 cm galangal, sliced
5 cm ginger, sliced
8 cm turmeric, sliced
125 g red chili
130 ml oil
100 ml water
5 pc candlenut, crushed
2 tsp white peppercorn
1 tbsp coriander
2 tsp cumin
1/2 nutmeg
Whole Spices:
3 pc clove
6 pc cardamom
2 pc star anise
5 cm cinnamon
Other ingredients:
2 stalk lemongrass
3 pc bay leaf
5 pc kaffir lime leaf
1/2 pc turmeric leaf
2 pc asam kandis
3 liter water
3 tbsp salt
1 tbsp chicken powder
1/2 tbsp MSG
1–2 tbsp sugar (optional)
130 ml coconut milk
To serve:
Green Thai chili sambal
Pickled shallot
Fried shallot
Lime
White rice
Steps:
1. Bring water to a boil. Add goat ribs, bay leaf, crushed ginger, and salt. Pressure cook for 15 minutes.
2. Heat a pan. Add white peppercorn, coriander, cumin, nutmeg, and crushed candlenut. Toast until fragrant.
3. In a blender, add shallot, garlic, red chili, turmeric, ginger, galangal, toasted spices, oil, and water. Blend until smooth.
4. Sauté the spice paste, then add bay leaf, kaffir lime leaf, crushed lemongrass, turmeric leaf, cinnamon, cardamom, clove, star anise, and asam kandis. Cook until fragrant and the oil separates. Set aside.
5. Drain the ribs, then transfer to a saucepan. Add spice paste, water, salt, chicken powder, MSG, sugar, and coconut milk. Cook over medium-low heat for 15 minutes.
6. Gulai Kambing is ready to serve.
