Today, we’reSlow-braised veal shanks served over creamy, golden saffron risotto — a classic Italian dish.
🔥 Osso Buco — Ingredients (Serves 4)
• 4 veal shanks (with marrow)
• 1 large onion, chopped
• 1 carrot, finely diced
• 1 celery stalk, finely diced
• 3–4 cloves garlic
• 2–3 cups beef broth
• ½ cup white cooking wine (optional)
• Salt, black pepper, paprika
• Flour (for a light coating)
• Butter + olive oil
• 1 bay leaf
• A pinch of rosemary or thyme

🔪 Osso Buco — How to Make
1) Season the Meat
Salt + black pepper + paprika → dust lightly with flour.
2) Sear
Sear in butter and olive oil until deeply browned and caramelized.
3) Aromatic Base
• Sauté onion, carrot, celery, and garlic for 7–8 minutes until golden.
• (Optional) Deglaze with white wine.
4) Braising Liquid
• Add hot broth.
• Add bay leaf, rosemary, salt, and pepper.
• Return shanks to the pot.
5) Slow Cook
Low heat → 2–2.5 hours → until tender and falling apart, and the sauce becomes rich and thick.

🌿 Classic Gremolata
• 2–3 tbsp fresh parsley, finely chopped
• 1 tbsp fresh lemon zest
• 1 garlic clove, grated
• A pinch of salt
• 1 tbsp olive oil (optional)

🍚 Saffron Risotto (Risotto alla Milanese)
Ingredients
• 250 g Arborio or Carnaroli rice
• 2 tbsp butter
• ½ onion, finely chopped
• ~1 liter hot broth
• 2–3 tbsp strong saffron infusion
• 50–80 g grated Parmesan

Method
1) Base
Sauté onion in butter until translucent → add rice → toast for 1 minute (without browning).
2) Add Broth
Add hot broth one ladle at a time → stir → absorb → repeat (18–20 minutes).
3) Saffron
Add saffron halfway through cooking.
4) Finish
Stir in cold butter + Parmesan → creamy texture → adjust salt and white pepper.

🍽 Plating
1. Spoon a layer of saffron risotto in the center of the plate.
2. Place the tender osso buco on top.
3. Add a spoonful of the rich braising sauce.
4. Finish with fresh gremolata.
