In the spirit of low-waste, cost-effective eating, we’re using the weeks old kimchi + homemade pickles in the back of my fridge to make BIBIMBAP (비빔밥 )!
INGREDIENTS:
- white rice
- 1 can of black beans
- 1 cup shredded carrots
- any kimchi/ pickled veg
- 1 fried egg
to season the black beans:
- 2 tsp soy sauce
- 1 tsp agave
- 1/2 tsp sesame oil
- 1/2 tsp garlic powder
- sprinkle of salt
- sprinkle of pepper
to season the carrot:
- 1 tsp sesame oil
- 1 tsp honey
- sprinkle of salt
cho gochujang (spicy red pepper sauce)
- 1 tbsp gochuchang (Korean red pepper paste) OR soy sauce for a non-spicy version
- 1 tbsp rice vinegar or white vinegar
- 1 tbsp white sugar
- 1/2 tsp sesame oil
BIBIMBAP 비빔밥 RECIPE!
1. Cook some rice (and freeze the leftovers in single serving portions!)
2. Geomeun-kongjorim (검은콩조림) aka Korean braised black beans make for a great, cost-effective substitution for meat! Rinse your beans until there’s no foam left & season with soy sauce, agave, sesame oil, garlic powder, salt and pep
3. Stir fry shredded carrot with sesame oil, honey, and salt
4. Make your cho gochujang with gochujang (or substitue with soy sauce if you want a non-spicy sauce), rice vinegar, white sugar, and sesame oil
5. Assemble your plate with rice, braised black beans, stir fried carrot, kimchi/ pickles, a fried egg, + that spicy sauce!
6. Mix everything up and enjoy!
7. Note: welcomed ingredients include stir fried spinach, bean sprouts, zucchini, sauteed mushrooms, any protein, etc etc etc!
