This recipe uses a "stir-and-freeze" method, similar to Maomao's, for a simple, no-machine ice cream.
Ingredients:
- Ice Cream Base:
- 250 ml very cold full-fat milk
- 250 ml very cold double cream (at least 35% fat)
- 80 g granulated sugar (caster sugar works best)
- 1 tsp vanilla extract (optional)
- Pinch of salt
Mix-ins (Maomao inspired):
- 30 g chopped walnuts
- 30 g diced apricots
- 30 g diced dates
- 30 g diced peach
For Freezing:
- 1 kg ice cubes
- 200-250 g coarse salt
- Large bowl (metal best) OR large freezer bag
- Smaller metal bowl OR sealable bag (for ice cream)
Instructions:
Make Base:
In a bowl, whisk milk, cream, sugar, vanilla (if using), and salt until sugar dissolves. Stir in walnuts, apricots, and dates.
Freeze with Salt & Ice:
Bowl Method: Fill large bowl with ice and salt. Nest smaller bowl (with ice cream base) inside. Stir constantly for 15-20 mins until thickened.
Bag Method: Pour base into a sealed bag (double-bag). Put in a larger bag with ice and salt. Shake/knead bags for 10-15 mins until firming up.
Finish:
Remove from ice bath. If using fresh peach, fold it in. Transfer to an airtight freezer container. Freeze 3-4 hours. Stir every 30-60 mins for the first 2-3 hours for best texture. Enjoy your simple, Maomao-style treat!
