Penne Gorgonzola 🍝 from One Piece 👨🍳🏴☠️
Ingredients:
-1500ml water
-200g conchiglie
-100g bacon, pancetta or speck
-1-2 tbsp tomato paste
-100ml milk
-100ml heavy cream
-50g blue cheese, gorgonzola
-2-3 tbsp grated parmesan cheese
-black pepper
-1 tbsp salt
-fresh parsley
Instructions:
Dice the bacon. Fry slowly until crispy; remove and set aside. Leave 1-2 tablespoons of fat in the pan. Stir the tomato purée into the fat over low heat for 30 seconds. Turn off the heat under this pan and set it aside.
Boil water with salt, and cook the penne for one minute less than indicated in a separate pot. Reserve 120ml of pasta water before draining. Drain the penne and set it aside.
Return the pan with the tomato fat to medium-low heat. On medium-low heat, warm the milk and cream in this pan, stirring to incorporate the tomato fat. Crumble in the Gorgonzola and stir until melting.
Add the penne and a splash of reserved water; stir for one minute until the sauce thickens. Mix in the Parmesan and half of the crispy bacon.
Finish with black pepper and sprinkle the remaining bacon and parsley on top.
