What started as one of the most intimidating food experiences of my life slowly turned into one of the most eye opening. In Guwahati, I visited Aai Bodo Kitchen run by the Bodo tribe to try foods I had genuinely never imagined eating before.
The meal included snail fry, red ant eggs and silkworm fry cooked with onion, chilli and local spices. Every dish challenged me in a completely different way, especially the textures and flavours. Some moments were uncomfortable, some surprising and some honestly delicious in ways I did not expect at all.
But beyond the reactions and shock factor, this experience reminded me how easy it is to label unfamiliar food without understanding the culture behind it. Watching these dishes being prepared and learning why they are eaten completely changed my perspective. Assam continues to teach me that food is deeply connected to people, tradition and identity.
