Recipe:
-800g beef chuck, cubed
-2 tbsp oil
-salt and black pepper
-paprika and garlic powder
-2 tbsp flour
-3 yellow potatoes, cubed
-2 red carrots, sliced
-150g chestnuts, cooked
-200g red kidney beans
-2 red onions, wedged
-3 garlic cloves, crushed
-2 tbsp tomato paste
-400ml red wine
-600ml beef broth
-2 tbsp balsamic vinegar
-2 tbsp worcestershire sauce
-1 tbsp honey
-fresh thyme and 1 bay leaf
-20g cold butter
Instructions:
Add your cubed beef into a bowl, season with oil, salt, black pepper, paprika powder, garlic powder and flour, then mix it. Sear the beef in a pot with oil until browned, then remove the meat.
Sauté onions in the same pot. Add garlic and tomato paste, cooking for one minute. Deglaze with red wine, scraping the bottom for flavor.
Return the meat to the pot. Add broth, vinegar, worcestershire sauce, honey, and herbs. Brint it to a boil and then simmer on low heat for two hours.
Add potatoes and carrots. Simmer for thirty minutes until soft. Stir in the chestnuts and beans during the last ten minutes.
Remove from heat and discard herb stems. Stir in cold butter until the sauce is glossy and thick. Serve with thick-sliced bread for dipping and your done ^_^
