Recipe:
- 200g pasta
- 150g fresh mushrooms
- 1 tbsp olive oil
- 1 clove garlic, finely chopped
- 1/2 shallot or 1/4 onion, finely choped
- 100ml heavy cream
- 30g grated parmesan cheese, plus extra for serving
- optional: 20ml dry white wine
- 1/2 tbsp fresh parsley, chopped, plus extra for garnish
- salt and black pepper to taste
- optional: 1/4 lemon zest
Instructions:
Boil a pot of salted water and cook the pasta for 8-10 minutes or until al dente. Reserve 50ml of pasta water, drain the pasta and set aside.
Clean and slice the mushrooms. Heat olive oil in a pan over medium heat. Add the mushrooms and cook for 5-7 minutes until almost golden. Add garlic and onion, cook 2-3 minutes. Add white wine and simmer for 1-2 minutes. Add some fresh parsley, lemon zest and stir in the cream, simmer for 2-3 minutes.
Toss the pasta in the sauce and a bit of the reserved pasta water if needed. Simmer for an additional 2-3 minutes. Season with salt and pepper to taste. Turn of the heat off and add parmesan cheese. Add more pasta water if needed.
Garnish on a plate with more parmesan cheese and parsley.
