Here's how you can prepare the dough for making green onion pancakes.
Ingredients:
2 cups all-purpose flour
1 teaspoon salt
1 tablespoon condensed milk or sugar
1/2 cup water (approximately)
2 tablespoons ghee or margarine
Extra ghee or oil for cooking
Instructions:
Mix Dry Ingredients:
In a mixing bowl, combine the all-purpose flour and salt. If you're using sugar instead of condensed milk, add it to the dry mixture.
Make Dough:
Gradually add water while mixing until the dough starts to come together. You may not need all of the water. The goal is to form a soft, slightly sticky dough.
Knead and Add Fat:
Turn the dough out onto a lightly floured surface. Knead the dough for about 5-7 minutes until it's smooth and elastic. Gradually work in the ghee or margarine while kneading.
Rest the Dough:
Form the dough into a ball and place it in a bowl. Cover the bowl with a damp cloth or plastic wrap and let it rest for about 2-3 hours (or longer), ideally at room temperature. This resting period helps to develop the dough's texture.
Divide and Shape:
After the resting period, divide the dough into tennis ball-sized portions and roll each portion into a smooth ball. Take each dough ball and dip it into a small bowl of oil or coat it with oil using your hands to prevent sticking to the rolling pin and the surface.
Flatten the Dough:
Place the oiled dough ball onto a lightly oiled surface, such as a countertop or a wooden board. Gently press down on the dough ball to flatten it slightly.
Start Rolling:
Position your rolling pin at the center of the dough and roll it away from you. The oiled dough might be a bit slippery, so apply gentle pressure and keep the dough moving. Roll in one direction until the dough spreads outward.
Rotate and Continue Rolling:
Rotate the dough 90 degrees (a quarter turn) clockwise. This helps in achieving an even thickness and prevents sticking. Roll the pin over the dough in the new direction, again applying gentle and even pressure.
Repeat Rotations:
Continue rotating the dough and rolling it in different directions until you achieve your desired thickness.
Be mindful not to use excessive oil, as it can make the dough too greasy. It might take a bit of practice to get the right feel for the process, but with time, you'll be able to achieve the desired results.
