Ingredients:
-2 cans (400g each) Borlotti or Pinto beans, drained
-150g pancetta or thick-cut bacon, diced
-100g spicy Italian sausage, sliced
-1/2 medium yellow onion, finely diced
-3 garlic cloves, minced
-1 can (400g) crushed tomatoes
-1/2 glass dry red wine
-1 fresh red chili pepper, finely chopped
-1 bay leaf
-2 tbsp olive oil
-1 rustic loaf of crusty bread (for dipping!)
-salt and pepper to taste
Instructions:
Heat the olive oil in a large cast-iron skillet over medium heat. Add the onion and sauté until soft and translucent, about 3 minutes.
Add the pancetta and sliced sausage. Cook until the meat edges turn crisp and the fats render. Stir in the garlic and chili pepper, cooking for 1 minute until fragrant.
Pour in the red wine to deglaze the pan, scraping up all the tasty bits from the bottom. Let the liquid reduce by half.
Turn the heat down to low. Add the tomatoes, beans, and bay leaf. Season with salt and pepper. Simmer gently for 20 minutes until the sauce is thick and rich.
Serve steaming hot straight from the skillet. Serve with a torn loaf of rustic bread used as your spoon. Slap anyone who tries to steal a bite. 💥
