The formed raw balls fall directly into the hot boiling oil. They sink first to set their shape, then gradually float up to cook evenly. Keep frying over medium steady heat until the balls turn golden and appealing with crispy skin and tender, flavorful interiors. Finally, take them out to drain excess oil, and a pot of authentic, rustic-tasting mung bean balls is ready to serve.
