Recipe:
-500g chicken
-15g ginger
-2 garlic cloves
-2 tbsp sake
-4 tbsp soy sauce
-optional: MSG
-optional: 1 tsp honey
for frying:
-1:1 flour and potato starch
-frying oil
Sauce:
-2 tbsp oil
-120ml honey
-60ml soy sauce
-4 garlic cloves
-1 tsp ginger
-1 tsp worcestershire sauce
-2 tbsp ketchup
-2 tbsp sriracha
-1 tsp cornstarch
-50ml water
Toppings:
-lemon
-pinch of salt
-shredded cabbage
Cut your chicken thigh or breast into bite size pieces. In a large bowl add grated ginger, garlic, sake, soy sauce, MSG and mix. Let the marinate rest in the fridge for at least 30 mins.
In a bowl add flour, potato starch and mix. Now coat all of the chicken. Remove excess flour. Fry your chicken at 150°C/300°F for 4-5 minutes. Let it rest for 5 minutes.
Add all Ingredients for your sauce into a pan. Cook on medium heat. Add the cornstarch in water and thicken the sauce. Let it simmer for 5 minutes.
Finally fry your chicken at 180°C/360°F until golden brown. Combine the fried chicken with the sauce. Serve with a pinch of salt, lemon and shredded cabbage.
