Ingredients:
-Batter
-150 g flour
-2 Tbsp granulated sugar
-1 tsp baking powder
-1/4 tsp salt
-2 large eggs, separated
-240 ml milk
-60 g unsalted butter
Sauce:
-200 g fresh or frozen raspberries
-50 g granulated sugar
-1 tsp fresh lemon juice
-1-2 Tbsp Brandy or Raspberry Liqueur of choice
Apples
-1-2 large crisp apples, sliced into Ducks
-30 g unsalted butter
-1 Tbsp brown sugar
-1/2 tsp cinnamon
-1 tsp flaky sea salt (optional)
Toppings:
-blueberries
-chocolate
Instructions:
Whisk dry batter ingredients and whisk wet ingredients together. (Optional) Whip egg whites to stiff peaks, then gently fold into the batter.
Combine raspberries and sugar in a saucepan; simmer over medium-low heat until syrupy (5-8 min). Strain for a smooth sauce or leave seeds. Stir in lemon juice and liqueur (optional). Refrigerate until completely cool.
Cut duck shapes out of an apple. Gently sauté the ducks in butter, brown sugar, and cinnamon over medium-low heat. Flip carefully until glazed and firm. Keep warm.
Pour 60 ml batter onto a hot griddle; cook until bubbles form, then flip until golden. Stack 3 pancakes. Pour the cool Raspberry Sauce around the base to create the "sea."
Arrange the warm apple ducks on the sauce. Garnish with blueberries and chocolate shavings, then serve.
